I am like a Jack of All Trades. I like to learn about many a varied topic.
I have been cooking all my life, I think, starting when I used to make dinner for the family when my mom was working. I also loved to bake because there are usually a lot of people willing to eat something sweet, and there were six people in my family.
As the years passed by, I was mostly cooking for one, which is basically pretty boring, and now I struggle on a daily basis trying to feed my picky child. That kind of cooking is not the fun part for me because the sweet stuff is what gets people eating.
Being a teacher, I loved bringing in food for my classes and for the faculty. I have brought in brownies and Rice Krispie treats for both my class and the faculty over the years but those are pretty simple to make.
And I always confess that my brownies that are so good, are Betty Crocker Dark Chocolate mix in the box. I give credit where credit is due.
The one sweet that I do make from scratch and over the years have gotten many compliments about are my banana chocolate chip mini-muffins. It started out as a basic banana bread and then a friend suggested I add chocolate chips to it, which was a game changer, and then I saw mini-muffin pans and thought why not?
So, I bought the pans, tweaked the recipe for the time in the oven and voila! Here we are!
Now, I may not be a food blogger but being the Jack of All Trades, I will share my muffins here. I was making them last week and decided to document it along the way with a video. I also have the recipe for you to download and make your own.
They are easy and so good. I think everyone should try them. If you like banana and chocolate and muffins, well, then you are my target audience.

Banana Bread Recipe
1 cup sugar
1/3 cup butter
2 eggs
1 ½ cup bananas, mashed
1/3 cup water
1 2/3 cup flour
1 tsp baking soda
½ tsp salt
¼ tsp baking powder
Optional: 4-6 oz of chocolate chips or nuts (if you prefer)
Preheat oven to 350 degrees. Grease bottom of pans.
Mix sugar, butter, stir in eggs.
Add bananas and water. Beat 30 seconds.
Add remaining ingredients. Beat another 30 seconds.
Pour into pan. (If using muffins tins, about 2/3 full, they will rise some)
For bread: Bake for about 45 minutes (depending on your oven) and check for with toothpick. When it comes out clean, it is done. Original recipe called for 55-60 minutes, but I found that was too long. Also, depended on how deep your pan is, loaf pans needed more time.
For muffins: Bake for about 13-15 minutes, checking after 13 minutes for clean toothpick.
